Roasted Carrot Salad

I love roasted veggies. And I love these roasted carrots with fresh greens and the crunch from the almonds and the yummy dressing. It's all so good together. I found this at Your Homebased Mom.

Roasted Carrot Salad
10-12 carrots, peeled and thinly sliced. About 5 cups
1/2 c. slivered almonds
4 cloves garlic, minced
1/4 c. olive oil
Salt and pepper to taste
1 t. honey
1 T. apple cider vinegar
1/4 c. dried cranberries
2-4 c. arugula
Preheat oven to 400°.

Combine carrots, almonds and garlic in a bowl. Drizzle with olive oil and stir to coat. Season with salt and pepper. 

Spread in single layer on a cookie sheet. Bake for 20-30 minutes or until carrots are tender, not mushy. Remove and allow to cool to room temperature.

Mix together honey and vinegar and drizzle over cooled carrots. Add in cranberries and more salt and pepper to taste.

Preparation for Life

Super short letter and only one photo from Alex this week. He said they were having a district p-day and didn't have time to write more. That usually means they do something fun so I hope it was. 




Today I don't have too much time, so I would just like to share
something I really realized this week. I was reading the liahona for
February this week, and saw that one of the was about having spiritual
discussions. When I got the the first tip, I automatically recognized
that the writer got the information from Preach My Gospel--the
guidebook for missionaries. It really made me realize that this
mission is preparing me for my entire life, and I know that it is
because I am serving others and my God. Please, if you want to be
better, than serve others. I invite all of you to read Preach My
Gospel and find out how to apply it to your life. I promise that as
you do you will be blessed in your relationships with others.
