Spicy Bean Pizza

So my first recipe post in quite a while is a strange one, but I like it. It uses the same basic seasoned bean mixture as the Bean & Cheese Quesadillas. I'm not sure why it's called spicy bean pizza since it has dill weed or cumin, but isn't spicy to me. I like to add crushed red pepper to the bean mixture for a little heat or you can cut up hot pepers and add them. I made this many years ago and my sister Tiffany loved it. I don't know if she still would and since she lives in Georgia, I couldn't offer her any this time. Spicy Bean Pizza
1 c. green pepper, chopped
1/2 c. red onion, chopped
1 t. olive oil
1 (16-oz.) can pinto beans, rinsed & drained
1 (15 1/2-oz.) dark red kidney beans, rinsed & drained
1 T. lemon juice
1/2 t. paprika
1/2 t. dried dill weed or cumin seed
1/2 t. salt
1/4 t. garlic powder

1 (10-oz.) pkg. refrigerated pizza crust dough
8 oz. pizza sauce
2 c. mozzarella cheese, shredded

Preheat oven to 425ยบ. Combine green pepper, onion and oil in 2-quart casserole. Cover. Microwave on HIGH for 4-6 minutes, or until begetables are tender, stirring once. Add beans, lemon juice, paprika, dill weed or cumin seed, salt and garlic powder. Mix well. Re-cover. Microwave on HIGH for 3-5 minutes, or until mixture is very hot, stirring once or twice. Mash beans slightly. Set aside.

Grease 12-inch pizza pan. Press dough into prepared pan. Bake for 5 - 7 minutes, or just until crust begins to brown. Spread sauce evenly over crust. Spread bean mixture evenly over sauce. Sprinkle with cheese. Bake for 10 - 13 minutes, or unti crust is brown and cheese is melted.

  2. I don't recall it at all but if I loved it I will have to make it to try it again and have Adam try it. I love beans and am trying to find new ways that Adam will be willing to eat them.
