This salad from Julia's Album with its balsamic dressing is beautiful and colorful and tastes great too. Vitamins, protein and fresh flavor. Such a perfect meal on its own or as a side dish and it is really easy to throw together. I put just a little of the dressing in the salad and tossed it and then served the rest of the dressing on the side.
Quinoa Salad with Spinach, Strawberries, and Blueberries
Dressing:
1/2 c. olive oil
1/4 c. balsamic vinegar
3 to 4 T. brown sugar
1 1/2 t. garlic powder
1 t. mustard powder
1 t. onion powder
Garlic salt or garlic powder
Salt and pepper
Salad:
1 (10-oz) pkg. fresh spinach (about 10 c. of torn leaves)
2 c. sliced fresh strawberries (cleaned and hulled)
1 c. blueberries
1 c. mandarin orange slices
1 c. sliced peach
1/4 c. sliced green onions
1 c. cooked quinoa
In
a medium bowl, combine the dressing ingredients, and whisk together
well. Add salt and pepper to taste. You can serve the dressing
immediately or cover it and chill for an hour.
In a large bowl, combine all of the salad ingredients. Right before serving, add the dressing to the salad and toss.
