The frosting is what makes the flavor of these bars POP. As you can see, I didn't divide the batter in half well this time so there is a lot of green and not much pink. It still tasted good though.
Jam Layer Bars
1 pie dough
1/4 c. raspberry jam
1/2 c. butter or margarine, softened
2/3 c. sugar
2 eggs
2/3 c. flour
1/4 t. salt
Red food coloring
Green food coloring
Frosting:
2 T. butter, softened
1 1/2-2 c. powdered sugar
2 T. cream or milk
1 t. almond extract
Prepare pie dough for one crust unbaked shell. Preheat oven to 350ยบ. Line an 8" square ungreased cake pan with pastry. Spread with raspberry jam.
Cream butter and sugar together thoroughly. Add eggs, beating until light and fluffy. Add flour and salt; blend well. Divide batter in half. Add 6 drops green food coloring to one half and mix well. Add red food coloring to other half and mix well.
First spread green layer, doing your best not to spread the jam onto the green batter. Once green is covering all of the jam, repeat with pink layer. Bake for 30-40 minutes or until toothpick comes out clean. Cool completely then frost.
To make frosting, beat frosting ingredients together until smooth and creamy, adding enough powdered sugar to make a spreading consistency. Spread over cooled bars.
Let set and then cut into bars.
