Choco-Nut Dainties

I haven't been posting much lately because I've been busy organizing a bake sale that we finally had on Saturday as a fundraiser for a little baby who needs a lung transplant. It was a lot of work, but it was great to be able to give the proceeds to the family. And now we have friends from out of town staying with us so I might not be posting much this week either. Here's one of the recipes I made for the bake sale. It's a crispy cookie with chocolate and pecans on the ends. The ends are definitely my favorite part of the cookie.
Choco-Nut Dainties

1 c. butter or margarine, softened & divided
1/4 c. sugar
1 large egg
1 1/2 t. vanilla extract
2 1/4 c. flour
1/2 t. salt
2 c. mini semisweet chocolate chips, divided
1 c. finely chopped walnuts or pecans

Preheat oven to 350ยบ. Beat 3/4 cup butter at medium speed with an electric mixer until creamy; gradually add sugar. Add egg and vanilla, mixing well.

In separate bowl, combine flour and salt; add to butter mixture, mixing until blended. Stir in 1 cup chocolate morsels.

Shape dough into 1 1/2- x 1/2-inch logs. Place on ungreased cookie sheets. Bake for 12 to 15 minutes or until set. Remove to wire racks to cool.

Combine remaining 1 cup chocolate morsels and remaining 1/4 cup butter in a small heavy saucepan; cook over low heat, stirring often, until chocolate melts. Dip ends of cookies into mixture, and roll in chopped nuts. Place on wax paper until chocolate is firm. Store in an airtight container; freeze up to 6 months, if desired.
