Chocolate Chip Cookie Dough

Do your kids love to eat the cookie dough before you bake the cookies? Maybe you do too. Years ago I found this recipe for cookie dough with no eggs that you eat raw, but cannot use to make real cookies. We sometimes whip this up when we don’t have enough time to bake anything. Just a little of it satisfies a sweet tooth. It’s not pretty, but it’s easy! (By the way, my kids didn't all eat out of the same bowl -Yuck!-, they just thought it looked fun for the photo with 3 spoons.)
Chocolate Chip Cookie Dough

½ c. margarine, softened
¾ c. light brown sugar
1 c. flour
1 T. vanilla
½ t. salt
1 c. chocolate chips
4-6 T. water

Cream together the margarine and sugar in a large bowl. Stir in the flour, salt, vanilla and chocolate chips. Add the water, one tablespoon at a time, until you have reached a cookie dough consistency. DO NOT BAKE.
Yield: 2 cups

The health food store sells a powdered egg substitute that is safe to eat raw and it bakes like the real thing - it seems expensive, but when you really compare, you're not paying any more per "egg" than the real stuff (it just comes with many, many more "eggs" per container). That way you still have the option to bake them. You can also use ground flax seed (1 Tbs. ground flax and 3 Tbs. water per egg you are substituting), but that tends to work best in heavier foods (zucchini bread, whole wheat recipes's, etc.). I hope you don't mind me going on about it - I've had to do a lot of experimenting and learning to get around using animal products, so I hope this tip will save someone the trouble and actually turn out to be useful!

  2. Mmm! I love cookie dough. My husband thinks that gross! I'm not sure he's every really tried it. When I was young, very young, my older sister used to sneak and make cookie dough, she'd just throw all the main ingredients together and we'd sneak into a closet and sit and eat it. Good stuff! Only my two year old seems to like licking beaters and such so far. They others don't really like it. Great post.

  3. Tara, I have ground flaxseed that I sometimes add to baked goods for the fiber and other nutrients, but have never heard of it being an egg substitute. Good to know! I love putting it in the blender with skim milk and fruit.
