It can't get much easier than this dish! It tastes great too. If I have enough time, I chop garlic and sauté it before adding it to the sauce instead of using garlic powder. When I made this last week it was snowing so I didn't grill the chicken. I just chopped it and cooked it in a skillet. You can also use rotisserie chicken. For those of you who don't know what Rotel tomatoes are, they are diced tomatoes with green chilies.
Spicy Chicken Alfredo
1 (10-oz.) can Rotel tomatoes

1 (16-oz.) jar Alfredo sauce
Garlic Powder to taste
12 oz. fettuccine, cooked according to package directions
3-4 chicken breasts, grilled
In a medium size pot, heat together the Rotel, Alfredo sauce and garlic powder. Place fettuccine onto each plate, then pour sauce on top. Top with grilled chicken.

I'm actually making chicken alfrado tonight. I make my own sauce by combining cream cheese, butter and garlic in a sauce pan until soft and melted and then I take my hand blender and while I am pouring in milk gradually I blend with the hand mixer blender thing. Then I add parmesan cheese to taste. I don't do exact measurements I just eyeball the whole thing. But it is really yummy and it is one of the kids favorites.
